Slaw
- 2 cups sugarloaf cabbage, finely shredded
- 1 large carrot, grated
- 1 small red onion, finely sliced

To assemble and serve
- 12 soft tortillas
- 2 avocados, cut into wedges
- ½ cup fresh coriander leaves
- 2 red chillies, finely sliced (optional)

Method
Crumbed shark
- Whisk together the egg and milk in a medium-sized bowl.
- Place the flour and panko breadcrumbs into separate shallow bowls.
- Coat a shark strip in flour, then dip it into the egg mixture before coating it evenly with breadcrumbs. Repeat until all the strips are coated.
- Arrange the crumbed shark pieces in a single layer on a tray, cover and refrigerate until ready to cook.
- Heat the vegetable oil in a large frying pan over a medium heat.
- Cook the crumbed shark in batches for about 3 to 4 minutes, turning until golden, crisp and cooked through.
- Drain the shark strips on paper towel.
Slaw
- Combine the cabbage, carrot, red onion and mayonnaise in a large bowl.
- Mix well and allow to stand for 10 minutes to slightly soften the cabbage.
Assemble
- Preheat the oven to 180°C.
- Wrap the tortillas in foil and warm them in the oven for about 10 minutes.
- Place a strip of crumbed shark onto each warm tortilla.
- Top with the slaw, avocado wedges, coriander leaves and sliced chilli, if using.
- Serve immediately.
To serve
Serve warm with fresh lime (or lemon) wedges for squeezing over the tacos.
